Soup Saga

I got a food processor for Christmas (yay!).  
With my newest appliance, I plan to continue my pursuit of clean, natural eating via SOUPS! 

Expect posts here about my soup saga, as a part of my journey to eliminate processed, HFC (high fructose corn syrup) foods from our diet altogether.  

Please comment here with suggestions for realistic, affordable food choices/ recipes if you feel so moved.

Watercress Soup
In a recent historical fiction novel series I read, the main character often gathered watercress from creeks near her house to provide her family with the nutrition necessary to prevent scurvy and other diseases caused by malnutrition in that era.  So my eyes perked up when I saw this recipe floating around online, then saw watercress for $2 a bag at my local farmer's market!  I tried the recipe and it was a delicious success, not only with me but also with all the older members of my family (Jacie won't come near any of my soups).

I looked up the health benefits of watercress and am amazed at how beneficial it is and how accessible it is!  More of this soup to come!

Wednesday's Soup:  Healthy Zuppa Toscana
My family's favorite and most requested, this soup is a slimmed down, healthier version of Olive Garden's Zuppa Toscana.  I uses this blog's recipe: http://simplyhealthyfam.blogspot.com/2010/10/zuppa-toscana.html?m=1

as my springboards.

I use 3 or 4 pre-fab sausages (you know, the frozen ones from the bag) heated in the microwave, chop up several potatoes and dump them in a pot of chicken broth-based soup, seasoned with garlic salt and minced onions for flavoring.  I add the cup of almond milk (replacing half-n-half) and kale after the potatoes are soft and the other ingredients have cooked together for about 20 min.  It's quick and easy, delicious, and healthy!

Thursday's Soup:  Cauliflower and Broccoli Soup
I'm returning to a tried and true (and my personal favorite) favorite tonight.  As much as I try, I just can't make myself like sweet potato in any form.  We still have lots of leftovers from Tuesday's soup, but I told Conroy that it's his job to finish it as neither Fiona nor I care for it that much (I just can't get Jacie to eat soups at all, much to my consternation!).  But the Broccoli/Cauliflower?  I do add a half cup of almond milk in my effort to eliminate dairy and cut calories way down, but still lend a creamy texture. Otherwise all that's in it is broccoli, cauliflower, and whatever seasonings you enjoy -- I add onion, garlic, basil, oregano, salt, and pepper -- Simple and relatively calorie free, as the above link suggests!


Tuesday's Soup:  Curried Sweet Potato Soup

Based on this 5-ingredient soup from my pinterest board,


I added curry, thyme, and celery.  I always look up at least two or three different recipes to get ideas of additional seasonings that might taste good.  Part of my effort here is to capture exactly what I did each time, so I can replicate it if it turns out well!  Feel free to add your advice below.

I love soups too! Zuppa Toscana is one of my favorites... I'll have to try your healthier version. :)
